Place the ginger snaps (200 g) in a sandwich bag and bash with a rolling pin to form fine crumbs. Melt the butter (100 g) in a medium frying pan then stir into the crumbs.

Press into a 20cm loose-bottomed non-stick round cake tin.

Whisk the cream cheese (400 g), mascarpone (250 g), and lime zest (2) until smooth. Sift and fold in the icing sugar (50 g) then spread over the top of the biscuit mix.

Pop in the fridge to set for at least 4 hours, but ideally overnight.

When you’re ready to serve, finely dice the mango (2) and combine with the lime juice and passion fruit (1). Spoon over the top of the cheesecake and serve with the mango and passion fruit coulis (to taste).
