A champagne of this quality is a delight to savour on its own as a celebratory aperitif, however it also makes a sumptuous partner for food, particularly goose liver pâté on brioche toast, chicken breast with creamy chanterelle mushrooms or even sweetbreads with morels

Product Description

A superb champagne with complex aromas of quince, white flowers and steely minerals, overlaid with subtle notes of fresh brioche. In the mouth the wine is intense and concentrated yet delicately structured, offering stone fruit, acacia honey and citrus flavours over a rich and persistent mousse cut through with fine acidity.

Pol Roger’s 2004 Brut Vintage is made from the traditional house vintage blend of 60% pinot noir and 40% chardonnay. The grapes were sourced from 20 grand- and premier-cru vineyards in the esteemed Montagne de Reims and Côte des Blancs areas. After pressing, the must underwent two débourbages (settlings), one immediately after and the second in tank at 6°C over 24 hours. Initial fermentation was slow and cool, with the temperature kept under 18°C and each grape variety and each village kept separate. Once blended, secondary fermentation took place in the bottle at 9°C in the deepest Pol Roger cellars. The wine was kept here for around eight years where it underwent remuage (riddling) by hand – a rarity in Champagne nowadays.
