Heat the vegetable oil (2 tbsp) in a large frying pan over medium heat. Add the spring onions (4) and ginger (1.5 cm) and cook for 2 minutes, until fragrant. Transfer to a heatproof bowl, season and set aside.

Return the pan to a high heat with a little more oil. Pour in the beaten eggs (3), season and scramble until just set. Lift out and set aside.

Add a touch more oil to the pan. Fry the red pepper (2), petit pois and sweetcorn (150 g) for 4-5 minutes until lightly charred. Stir in the tuna (1 tin) and the soy, ginger and garlic paste (1 jar), breaking up the tuna as it warms through.

Add the microwave rice (2 pouches) and the scrambled eggs. Stir-fry for 3 to 4 minutes, until piping hot and well combined. Season to taste with salt and pepper.

Spoon into bowls and finish with a drizzle of the spring onion oil.
