The dough is a simple yogurt and olive oil base which requires no proving – simply mix, lightly knead and then top with a speedy homemade pizza sauce and your favourite toppings, and you’re good to go. Use any toppings you have to hand – we’ve suggested courgettes, mushrooms and onions, but you could use sliced ham, sweetcorn, crumbled sausage or sliced chillies. step 1
First make the sauce. Add a splash of olive oil to a large frying pan over a medium heat. Add the garlic (2 cloves) and cook for 1-2 minutes until it smells fragrant, then tip in the chopped tomatoes (1 tin) and herb seasoning (1/2 tsp) and a pinch of salt. Simmer for 15 minutes, until reduced.

Preheat the oven to 220°C/200°C fan/gas mark 7 and place two large flat baking sheets (approx. 25 x 35cm) into the oven to heat up.

While the sauce is blipping away, make the dough. Add the flour (300 g), baking powder (1 tsp) and salt (1/2 tsp) to a large bowl and mix together. Make a well in the centre and add the yogurt (260 g) and olive oil (2 tbsp). Mix together, then use your hands to briefly knead into a dough on a floured surface.

Divide the dough into four equal pieces, then roll each out into a thin (5mm) oval shape on a floured surface, using your hands to press it into shape.

Remove the baking trays from the oven and carefully transfer the flatbreads onto the trays. Bake for 4 minutes.

Remove the trays from the oven and flip the flatbreads over.

Top each with some of the tomato sauce, mushrooms (30 g), courgette ribbons (1/4) and red onions (1/4). Tear over the mozzarella (1). Season with salt and pepper and drizzle with a little more olive oil. Return to the oven for a further 5 minutes, until the cheese is golden and bubbling. Top with a scattering of basil leaves (1 handful) if you’d like.

Season with salt and pepper and drizzle with a little more olive oil. Return to the oven for a further 5 minutes, until the cheese is golden and bubbling.
