Combine the eggs (8) and cheddar (50 g) in a jug and stir together. Season with salt and pepper.

Preheat the grill to medium.

Heat a splash of olive oil in a large non-stick ovenproof frying pan over a medium heat. Add the peppers (1) with a pinch of salt and cook for 3-4 minutes until starting to soften. Stir in the broccoli (1/2 head) and cook for a further 3 minutes. Stir in the peas (100 g) and spinach (40 g) and cook until the spinach is wilted.

Stir in the egg mixture and cook over a medium heat for 3-4 minutes, then transfer the pan to the grill and cook for a further 5 minutes or until the egg is just set.

Remove from under the grill using oven gloves and allow to cool slightly.

Meanwhile, slice and butter (4 tsp) the rolls (6).

Cut the frittata into wedges and serve in the rolls with a little bit of ketchup (to taste), if you like.
