Heat a large frying pan over a medium heat. Add a little olive oil, then add the sliced onions (1) and peppers (2). Cook for 7-10 minutes, until soft and golden.

Add the drained kidney beans (2 tins) to the pan along with the fajita seasoning (3 tbsp) and water (200 ml). Simmer for 10 minutes, then mash roughly half the beans with a potato masher. Stir in the ketchup (2 tbsp) and season to taste.

Meanwhile, place the defrosted avocado (200 g) in a mixing bowl and mash with a fork. Add the lime juice (1) and season to taste.

Drain the sweetcorn (1 tin) and add to a serving bowl.

Set out the warm beans, avocado, sweetcorn, wraps (4), grated cheddar (100 g) and lettuce (1 head). Let everyone build their own wraps.
