Heat a splash of oil in a large casserole over a medium heat. Add the onion (1), carrots (2) and celery (2 sticks) with a pinch of salt and cook for 7-8 minutes, until softened. Add the garlic (2 cloves) and tomato paste (2 tbsp) and cook for a further 2 minutes.

Stir in the chopped tomatoes (2 tins), adding a splash of water to each tin then swirling around, and adding to the sauce.

Season with salt and pepper. Bring to a gentle simmer, then cook for 20 minutes, until reduced.

Bring a large pan of water to the boil. Add a good pinch of salt. Cook the pasta (400 g) for 10 minutes, until al dente and then drain.

Meanwhile, remove the tomato sauce from the heat and allow to cool for 2 minutes (adding the cottage cheese while it’s too hot may cause the sauce to split). Stir in the cottage cheese (150 g). Blend with a stick blender until the sauce is silky smooth and creamy.

Add the drained pasta to the creamy sauce, tossing to coat. Serve with some grated cheddar (50 g) and fresh basil (5 g) on top, if you like.
