Heat a large frying pan over a medium heat and melt the butter (1 tbsp) with a glug of olive oil. Add the mushrooms (1 pack) and cook, undisturbed, for 5-7 minutes, then flip and cook for another 5 minutes until golden.

Stir through the truffle pesto (1 tbsp), then remove the pan from the heat and season to taste. Set aside.

Heat the grill to high. Lightly toast the sourdough (2 slices) on a foil-lined tray on one side, then flip and spoon over the mushrooms. Top with the thinly sliced Jarlsberg (80 g).

Grill for 3-4, minutes until the cheese is lightly melted, but you can still see the little holes on top. Scatter with thyme leaves (5 g) and season with a pinch of salt and pepper. Serve with a dollop of Dijon mustard (1 tbsp), if you like.
