Heat a griddle pan over a medium heat. Add the burgers (2), reduce the heat slightly and cook for 11 minutes on each side, until golden and cooked through.

Top the burgers with the cheddar slices (2 slices) for the final 1-2 minutes of cooking time, and allow the cheese to melt.

Lightly toast the burger buns (2) and spread the bases with the gochujang mayo (2 tbsp) and top with 1-2 pieces of lettuce (1).

Add the burgers, spoon over the kimchi (3 tbsp) and finish with a scattering of sesame seeds (1 tsp) and top with the top half of the bun.
