Rinse the couscous (200 g) under cold water. Bring 1 litre of water to the boil, add the couscous and stir. Cover, reduce the heat and simmer for 6-8 minutes until tender. Drain, rinse under cold water and set aside to cool.

In a mixing bowl, combine the tomatoes (1 pack) and fennel (1). Toss with the red wine vinegar (2 tbsp) and 2 tablespoons of olive oil (2 tbsp), then season with plenty of salt and pepper.

Fold the cooled couscous through the salad along with the tarragon (15 g) and dukkah (2 tbsp). Season to taste.

Serve in bowls with an extra sprinkle of dukkah to taste, and a dollop of labneh (1 tub).
