Preheat the grill to medium. Grill one side of the bread (8 slices) for 2-3 minutes until lightly toasted.

Add the butter (50 g) to a medium saucepan and melt over a medium heat. Stir in the flour (50 g) and cook until a paste forms.

Slowly pour in the ale (200 ml), stirring, until combined.

Stir in the mustard powder (1 tsp), Worcestershire sauce (1/2 tsp) and cheddar (250 g) and cook for 30 seconds until the cheese has melted.

Spread the mixture over the bread then grill for 5-7 minutes until golden and bubbling.
