Heat 1 tbsp of olive oil in a large frying pan or saucepan over a medium-low heat. Add the beef mince (1 pack) to the pan and break up with a spoon, season to taste with salt and pepper and leave to cook for 8-10 minutes, stirring occasionally, until golden brown. Remove the beef mince and transfer to a bowl.

Add the mushrooms (100 g) to a food processor and blitz until finely chopped.

Heat another splash of oil over a medium heat in the pan you cooked the mince in and add the onion (1), carrot (2), celery (2 ribs), pepper (1) and mushrooms with a pinch of salt. Cook for 7-8 minutes, until soft.

Add the beef mince back to the pan, add the cumin (1 tsp), ground coriander (1 tsp) and smoked paprika (2 tsp), add the chilli powder (1 pinch), if using. Add the tomato paste (2 tbsp) and stock pot (1), followed by the chopped tomatoes (1 tin) and mixed beans (1 tin) with their liquid. Season to taste with salt and pepper.

Top up with 300ml of water and simmer over a medium-low heat for 20-25 minutes, stirring occasionally, until the mixture has thickened and reduced.

Heat the rice (2 pouches) in the microwave according to the pack instructions. Serve the chilli with the rice and a little bit of cheese (80 g) on top, if you like, plus some fresh coriander (as needed).
