Heat a splash of olive oil in a large frying pan over a medium heat and add the garlic (2 cloves). Sizzle for 1 minute, then add the chopped tomatoes (1 tin), sundried tomato paste (1 tsp) and butter (15 g) . Season with salt and pepper. Turn the heat down to low, and leave to simmer while you get on with the chicken.

Place the chicken breasts (2) onto a clean chopping board and cover with a double layer of clingfilm. Bash with a rolling pin to flatten them to a 5mm thickness.

Tip the flour (50 g) into a shallow bowl. Add the egg (1) to a second shallow bowl. Combine the everything seasoning (1 tbsp), panko breadcrumbs (50 g) and Parmesan (25 g), saving a little to serve, in a third shallow bowl and season with salt and black pepper.

Dip the flattened chicken breasts first into the flour, then the egg, then the breadcrumb mix. Place in the air fryer and drizzle the chicken lightly with oil. Cook for 20 minutes at 180°C, turning halfway, until golden and cooked through.

Meanwhile, cook the spaghetti (175 g) in a pan of salted boiling water for 9-11 minutes, until al dente. Use tongs to toss into the tomato sauce. Grate over the remaining parmesan and scatter with the fresh basil (5 g).

Cut the chicken into slices, if you like, and serve with the spaghetti.
