To make the meatballs, combine the beef mince (1 pack), breadcrumbs (50 g), egg (1), Italian herb seasoning (2 tsp) and the parmesan (20 g) in a bowl and season with salt and pepper. Using clean hands, bring the mixture together. Wash your hands.

Using wet hands, shape the mixture into 16 golf ball-sized balls. Place on a tray and chill in the fridge for 10 minutes.

Meanwhile, heat a splash of oil in a large frying pan over a medium heat and add the onion (1), carrot (1), courgette (1) and garlic (3 cloves). Add a pinch of salt then cook for 7-9 minutes, until softened. Stir in the tomato everything sauce (1 jar). If you have it, stir in the rind from your parmesan. Leave to blip away while you make the meatballs.

When they've had 10 minutes to chill, heat a separate non-stick frying pan over a medium heat with a glug of oil and add the meatballs. Cook for 8-10 minutes, turning occasionally, until golden brown all over. Stir into the sauce.

While the meatballs are cooking, cook the spaghetti (400 g) in a pan of salted boiling water for 11 minutes or until al dente. Drain.

Serve the spaghetti with the meatballs and sauce, with some fresh basil (1 handful) and parmesan on top, if you like.
