Unroll the pastry (1 pack) onto the parchment paper from the pack. Using a 25cm pan, cut the pastry into a circular shape. Prick all over with a fork, then place on a plate and pop in the fridge to chill while you make the carrots.

Heat the 25cm ovenproof frying pan over medium heat. Add the butter (30 g) and let it melt, then reduce the heat to low and sprinkle over the sugar (30 g). Cook gently until the sugar has melted and turned a deep golden colour. Add a big pinch of salt.

Preheat the oven to 200°C/180°C fan/gas mark 6.

Add the carrots (2 packs), cut side down, to the pan, along with 50ml water. Cook gently for 5-10 minutes, until the carrots are nearly tender and the liquid has mostly evaporated. Remove from the heat.

Lay the chilled pastry circle on top of the carrots and tuck in the edges carefully.

Transfer the pan to the oven and bake for 20 minutes, until the pastry is puffed and golden.

Remove from the oven and rest for 2 minutes. Place a large plate over the pan and carefully flip to release the tart.

Top with the crumbled goat's cheese (1 pack) and a sprinkle of dukkah (2 tbsp). Finish with a pinch of flaky sea salt and serve warm.
