Preheat the oven to 200°C/180°C fan/gas mark 6.

Heat a splash of oil in a large, shallow oven-proof casserole over a medium heat and add the everything vegetable base (1 bag) and leek (1), along with a pinch of salt. Cook for 7-10 minutes, until softened.

Stir in the everything bechamel sauce (1 jar), cheddar (75 g), lemon zest (1) and mustard (2 tsp). Gently heat through and allow the cheese to melt, then remove from the heat. Season to taste with salt and pepper (be mindful that the smoked cod will be quite salty).

Cut the cod (2) into chunky 4cm pieces and place on top of the creamy sauce, along with the prawns (200 g). Push down slightly so the fish and prawns are just covered.

Halve the scones (4) and arrange cut sides down on top of the sauce.

Bake for 15-20 minutes, until the scones are golden brown, the sauce is bubbling, and the fish is cooked through. Serve with steamed green beans or broccoli.
