Preheat the oven to 180°C/160°C fan/gas mark 4. Line a 12-hole muffin tin with cupcake cases. Empty the cake sachet (1 box) into a bowl and whisk in the milk (100 ml), eggs (3) and softened butter (100 g). Beat the ingredients together for 1 minute, until there are no lumps.

Fold through the cinnamon (1/2 tsp), dried fruit (100 g), mixed peel (75 g), lemon zest (1), diced marzipan (200 g) and almond extract (1 tsp).

Spoon the mix evenly into the cases, being careful not to overfill.

Bake in the oven for 15-20 minutes, until lightly golden brown. Remove from the oven and allow to cool in the tin.

Once the muffins are cooled, dust with icing sugar (2 tbsp).
