Heat a splash of olive oil in a lidded frying pan over a medium heat and add the pepper (2) with a pinch of salt. Warm through for 2 minutes. Stir in the tomato sauce (1 jar) and gently heat through.

Make four wells in the sauce and crack in the eggs (4).

Turn the heat down to low, cover with the lid, and cook for 6-8 minutes, until the eggs are cooked to your liking.

Crumble over the feta (100 g) and scatter over the coriander (10 g). Serve with crusty bread, flatbread or gluten-free bread for dunking, if you like.
