Heat a splash of oil in a large, deep saucepan over a medium-high heat. Add the tomatoes (220 g) and the zest of the lemon (1) and cook for 5 minutes, until the tomatoes start to blister and burst.

Meanwhile, heat a pan of salted boiling water and cook the pasta (2 packs) for 4 minutes, according to the pack instructions.

When the pasta is almost ready, add the butter (35 g) and the juice of the lemon to the pan with the tomatoes.

Drain the cooked pasta into the buttery lemon sauce, tossing to coat.

Serve with some fresh basil leaves (15 g) and cracked black pepper on top.
