Preheat the oven to 220°C/200°C fan/gas mark 7. Place the katsu prawns (1 pack) on a large baking tray and bake for 12 minutes, turning halfway.

Meanwhile, bring a large saucepan filled with water to a boil. Once boiling, lower in the eggs (2) and gently boil for 6 minutes 30 seconds. Drain under cold water, then peel.

Meanwhile, add the katsu curry paste (3 tbsp) and 400ml of water to a large saucepan. Season to taste with salt. Bring to a simmer, add in the noodles (1 pack) and broccoli (180 g), and cook until almost tender, but with a bit of bite.

Divide the curry between bowls, top with the katsu prawns and soft-boiled eggs, sprinkle over the spring onions (2) and serve with a drizzle of sriracha (to taste).
