Heat the garlic oil (4 tbsp) in a large frying pan over a medium heat. Add the courgettes (3) and the zest of the lemon (1), and cook, stirring occasionally, for 15-20 minutes, until tender and sticky.

Meanwhile, combine the egg yolks (2) (keep the egg whites for another recipe) and parmesan (100 g) in a small bowl with 1 tsp ground black pepper.

Bring a large pan of salted boiling water to the boil and cook the linguine (400 g) for 8-10 minutes, until al dente.

When the pasta is almost done, quickly spoon a ladleful of the pasta cooking water into the bowl with the egg and parmesan and stir in.

Drain the pasta into the pan with the courgettes using tongs, saving the cooking water. Remove from the heat. Working quickly, add the parmesan and egg mix to the pasta and toss everything together to create a glossy sauce, adding an extra ladleful of pasta cooking water if needed.

Serve the pasta topped with the Calabrian chilli paste (1 tbsp), if you like.
