Makes 8 empanadas

To make the filling, combine the tuna (1 tin), sweetcorn (60 g), spring onions (4), fajita seasoning (2 tsp), piri mayo (2 tbsp) and the olives and cheddar (50 g). Mix well and season to taste with salt and pepper.

Roll the pastry (1 pack) out flat onto the baking paper that comes in the pack. Use an 11cm pastry cutter or a small plate to cut out 8 discs of pastry (you may need to re-roll the excess pastry a few times to get 8 circles).

Place 1 heaped tbsp of the filling on half of each pastry circle and brush the edge of the circle with the beaten egg (1). Fold the other half of the pastry over the filling and crimp the edges closed with a fork. Repeat with the remaining pastry.

Place onto the lined baking sheet and prick with a fork. Brush the tops with beaten egg. Place in the air fryer in a single layer and cook at 180°C for 15-20 minutes (you may need to work in batches, depending on the size of your air fryer. If this is the case, keep the uncooked empanadas in the fridge while the others cook).

Serve with a little extra piri piri mayo on the side, if you like.
