step 1
Preheat the oven to 220°C/200°C fan/gas mark 7. Add the sweet potato wedges (800 g) to a baking tray and toss with 1 tbsp of olive oil. Pop into the oven for 30 minutes.
step 2
Meanwhile, add the sliced radishes (1 handful) and rice wine vinegar (1 tbsp) to a mixing bowl. Add a pinch of salt and leave to infuse.
step 3
Meanwhile, make the marinade. Add the sriracha (1 tbsp), soy sauce (2 tsp), sesame oil (2 tsp) and maple syrup (2 tsp) to a bowl and mix together.
step 4
After 30 minutes, nestle in the salmon fillets (4) and brush with the marinade. Pop back into the oven for 15 minutes, until the salmon fillets are cooked through. When there are five minutes to go, add the tenderstem (200 g) and pak choi (250 g), toss well and return to the oven.
