Preheat the oven to 200°C/180°C fan/gas mark 6. Heat a large ovenproof frying pan over a medium-high heat with 1 tbsp olive oil. Add the chicken breasts (1 kg) and cook undisturbed for 7 minutes, until golden brown.

Flip over the chicken, then add the fennel (1), red pepper (1), ’nduja (1/2 jar) and tomato paste (1 tbsp). Cook for a few minutes, then add the fennel ragu sauce (1 jar) and chickpeas (1 jar), including the liquid from the jar.

Pop the frying pan into the oven and cook for 15-20 minutes, or until the chicken is cooked through, stirring in the peas (150 g) for the final 5 minutes. To check the chicken is cooked, cut a large piece in half to ensure the flesh is white.

Spoon over the stracciatella (100 g) and pesto (2 tbsp) then serve.
