Mix the grated cheddar (100 g), mozzarella (100 g) and spring onions (2) in a mixing bowl. Season with a pinch of salt and pepper.

Heat a large, lidded non-stick frying pan over a medium heat. Spread the gochujang mayo (2 tbsp) evenly onto the outside side of each slice of bread (4 slices). Add the sesame seeds (3 tbsp) to a plate and lightly press the bread into the sesame seeds to coat.

Place the bread, mayo-side down, into the pan and top each slice with a handful of spring onion and cheese mix to each half. Cover with a lid to melt the cheese and cook for 2 minutes.

Once the cheese is melted, top two slices of bread with the kimchi (100 g) and carefully flip the other slice of bread on top, squashing it down with a spatula or wooden spoon. Cook for another 2-3 minutes, until golden and crispy.

Serve with a bit more gochujang mayo, if you like.
