Cut the halloumi (250 g) into chip-shaped rectangles. Place the cornflakes (50 g) in a shallow bowl, breaking them up with your hands to form a crumb. Beat the egg (1) in another shallow bowl and add the flour (4 tbsp) to a third shallow bowl.

Dip the halloumi in the flour, then the egg, followed by the cornflakes to coat. Place in the air fryer and cook for 15 minutes at 180°C, until golden.

Meanwhile, thinly slice the cabbage (1/4), peel the carrots (2) and cut into thin strips, and finely slice the sping onions (4). Place in a bowl and stir in the edamame beans (100 g). Sprinkle over ½ tsp salt and toss in the nuoc cham dipping sauce (3 tbsp) and lime juice (2). Set aside.

Serve the halloumi fries with the slaw and gochujang mayo (4 tbsp).
