Preheat the oven to 190°C/170°C fan/gas mark 5. Line two large, flat baking sheets with greaseproof paper.

Beat the egg whites (2) with a pinch of salt with an electric whisk until stiff peaks form.

Fold in the sugar (250 g), lemon zest (1), ground almonds (200 g) and vanilla extract (1/2 tsp). Fold in 2 tbsp of lemon juice. Shape the dough into around 26 balls using wet hands.

Press the balls onto the trays, making an imprint with your thumb to flatten them slightly.

Bake for 15-20 minutes until starting to go golden brown. Remove from the oven and allow to cool completely. Use a silicone spatula to carefully remove them from the parchment and transfer to a cooling rack or large chopping board.

Meanwhile, melt the chocolate (75 g) in a bowl set over a pan of simmering water. Drizzle the chocolate over the biscuits in a zig-zag pattern. Set aside for the chocolate to set.
