Preheat the oven to 200°C/180°C fan/gas mark 5. Cut the baguette (1) in half lengthways, cut each piece in half down the middle and place on a baking tray.

Mix the red pepper (1), red onion (1/2), tuna (1 tin), sweetcorn (1 tin), mayonnaise (2 tbsp) and most of the cheddar (75 g), reserving a handful to sprinkle on top, in a bowl and season with salt and pepper.

Spread the mixture onto the baguettes then sprinkle with the remaining cheddar. Bake for 6-8 minutes, until the cheddar is golden and melted.
