Add the cottage cheese (120 g), broad bean, edamame and pea mix (200 g) and 1 egg (1) to a blender and blitz until completely smooth.

Transfer to a mixing bowl and stir through the spelt flour (50 g), lemon zest (1) and a pinch of salt. Fold through the mint (15 g), parsley (15 g) and spring onions (4).

Form the mixture into 4 fritters.

Heat a large frying pan with 1 tbsp olive oil over a medium-high heat. Add the fritters to the pan and cook for 4 minutes on each side, until golden brown. Preheat the oven to 200°C/180°C fan/gas mark 6. Add the fritters to a lined baking tray once cooked to keep them warm until you’re ready to serve.

Meanwhile, bring a saucepan filled with hot water to boil. Gently drop in the two remaining eggs (2) and cook for 7 minutes on a rolling simmer. Drain and rinse under cold water. Carefully peel the eggs the cut in half.

Serve the pea fritters on plates topped with the soft-boiled eggs. Serve with more cottage cheese if you wish, alongside the pea shoots (20 g). Sprinkle over the gut booster mega mix (1 tbsp) followed by salt and pepper to taste.
