Place the sugar (50 g) in a shallow bowl.

In a separate bowl, beat the eggs (2) and vanilla extract (1 tsp).

Cut a 4cm circle into the middle of each crumpet (4), being careful not to pierce the base. Carefully use a knife to remove circles of the crumpets and set aside.

Fill each crumpet with 1 tsp lemon curd (4 tsp) and 1 tsp blueberry jam (4 tsp). Replace the crumpet, pressing to seal. Dip each crumpet in the beaten egg.

Heat the butter (1 knob) with a splash of oil in a non-stick frying pan and add the crumpets. Cook for 2 minutes on one side, until golden, before flipping, and cooking for a further 2 minutes on the other side. Remove from the pan and toss in the sugar.

Serve with the blueberries (150 g) and yogurt (4 tbsp).
