Preheat the oven to 180°C/160°C fan/gas mark 4. Grease and line a square 20cm cake tin with parchment paper.

Empty the cake mix (1 box) into a bowl and add the eggs (3), milk (100 ml) and butter (100 g). Whisk for 1 minute with an electric whisk to combine.

Spoon into the prepared tray and bake for 25-30 minutes, until the cake is well risen and springs back when gently pressed.

Meanwhile, combine the icing sugar (125 g), food colouring (1 drop) and lemon juice (15 ml) stirring to create an icing that’s thick enough to coat the back of a spoon.

Allow the cake to cool for 10 minutes in the tin then remove and place on a wire rack. Allow to cool completely.

Spread the icing over the cake then sprinkle over the jazzie sprinkles (2 tbsp).
