If you’re using the grill, heat to high.

To make the quick-pickled cucumbers, use a speed peeler to cut thin rounds of cucumber (1/2) and place in a bowl with the rice wine vinegar (2 tbsp) and a pinch of salt. Set aside.

Spread the marinade (2 tbsp) over the salmon fillets (2) then sprinkle each fillet with 1 tbsp sesame seeds (2 tbsp). If grilling, place on a preheated aluminium-foil sheet and grill for 10 minutes, until cooked through. If using the air fryer, place in the basket and cook at 200°C for 10 minutes, until cooked through.

Meanwhile, cook the rice (1 pouch) according to the pack instructions and thinly slice the spring onions (3). Serve the salmon with the rice, quick-pickled cucumbers and spring onions on top.
