Add the plain flour (260 g), baking powder (2 tsp), and the caster sugar (4 tbsp) into a large mixing bowl. Add the whole milk (260 ml) and eggs (2) to a jug and whisk. Pour the mixture into the flour bowl and whisk until smooth. Leave to stand for five minutes.

Heat 2 tsp neutral oil in a large non-stick pan over a medium heat. Add a ladle of batter and cook for 2-3 minutes until bubbles appear. Flip and cook for 2 minutes more. Transfer to a plate and cover with a clean tea towel. Repeat with the remaining batter.

Spread each pancake with the salted caramel sauce (as needed). Top with yogurt (200 g), banana (2), dark chocolate (as needed) and digestives (2).
