Grate the onion (1), carrot (1), potato (1) and courgette (1) using a box grater (or a food processor) and transfer to a clean tea towel. Sprinkle with salt and leave to sit for at least five minutes.

Squeeze as much moisture as possible out, wringing the tea towel as tightly as you can.

Transfer to a bowl and toss with the flour (150 g), cumin (2 tsp), garam masala (1 tsp), turmeric (1/2 tsp), chili powder (1/2 tsp), coriander (2 tbsp) and a big pinch of salt. Pour in the sparking water (150 ml) steadily, combining until you have a very light batter (you may not need all the water).

Pour enough oil (as needed) (approx. 3cm deep) into a deep frying pan. Place over a medium heat and once it reaches 180°C (if you don’t have a thermometer, the oil has reached the correct temperature if you stick the end of a wooden spoon into the oil. If you see bubbles forming around the wood that start to float upwards, your oil is ready for frying.)

Gently drop a spoonful of the batter into the oil (in batches, we recommend no more than 3-4 at a time) and fry, turning occasionally for 4-5 minutes until golden brown. Remove with a slotted spoon and set aside on kitchen paper. Repeat until you have used all the batter.

Serve on a platter with the dip selection (1) and lime wedges (as needed) for squeezing.
