Preheat the oven to 200°C/180°C fan/gas mark 6. Trim the spring onions (2 bunches) and brush with a little oil.

Heat a griddle pan over a medium-high heat and char the spring onions, turning every so often, for 20-30 minutes, until charred and softened. Wrap in foil and pop in the oven for a further 10-15 minutes, until completely soft.

Meanwhile, toast the bread (4 slices) in the griddle pan until golden.

Serve the spring onions with the dip (250 g), sourdough and burrata (1), drizzled with a little extra virgin olive oil.
