Rub the lime wedge (1 wedge) around the rim of a large martini glass. Sprinkle the salt (1 tsp) onto a small plate, then dip the rim of the glass into the salt until it sticks. Fill the glass with ice cubes and set aside while you make the drink.

Pour the tequila (50 ml), honey (1 tsp), lime juice (15 ml) and juice (25 ml) into a cocktail shaker with a handful of ice. Shake everything well until the outside of the shaker feels very cold, then strain into your prepared martini glass.

Top up with the tonic water (100 ml) and garnish with a few pomegranate seeds (as needed).
