Cut the bases off the lettuces (2) and separate the leaves. Wash under cold water and set aside to dry.

Heat a heavy-based frying pan on a medium-high heat. Add the oil (1 tbsp) followed by the pork mince (500 g) and fry until browned and starting to crisp, using a wooden spoon to break up the mince. Spoon in the soy, ginger and garlic paste (2 tbsp), stir through and then remove from the heat.

Prepare the lettuce cups by adding a spoonful of the fried pork mixture to each one and dividing the carrot strips (1) and sliced radishes (4). Serve with sweet chilli sauce (to taste), if liked.
