Flavour-packed frittata

Recipe
A frittata is a brilliant recipe to have up your sleeve for lunch – it’s really simple and any leftovers can be eaten the next day. It’s also a great way to use up whatever veg you have in the fridge.

step 1
Heat 1 tbsp olive oil (as needed) and half of the M&S Easy chilli (1 tsp) in a frying pan over a medium heat and fry the leek slices (1) until they begin to sweat down.
step 2
In a bowl, whisk the eggs (8) with black pepper, salt and paprika (1 tsp). Stir in part of the feta cheese (150 g) and the cooked leeks.
step 3
Grease and line a baking dish (20cm x 30cm) with baking parchment and pour the egg mixture into the dish.
step 4
Evenly layer the asparagus spears (1 pack) on to the egg mixture and crumble over the remaining feta cheese (50 g) and M&S Easy chilli (1 tsp) with some more black pepper.
step 5
Place in the oven at 200°C/180°C fan/gas mark 6 and cook for 15 minutes until it is firm around the edges with a slight wobble in the middle.
step 6
Serve with your favourite side salad (to taste) and new potatoes (to taste), or just enjoy as is.
