Soak the sliced onion (1) in a bowl of salted cold water for 10 minutes, then drain thoroughly.

In a large bowl, mix the olive oil (3 tbsp), vinegar (1 tbsp), garlic (1 clove), chilli flakes (1/2 tsp), sugar (1 pinch) and season with salt to taste. Toss the sprouts in the dressing and set aside. Lightly season the orange (1) with salt and freshly ground black pepper.

Gently toss the orange, almonds (40 g), onion and parsley (25 g) into the sprouts (500 g). Flake the mackerel (2) over the top and serve.
