Peel the celeriac (1), slicing off the top and bottom and running a vegetable peeler down the sides to remove the tough skin. Continue to peel around the celeriac to create long, thin ribbons, until you get to the core. Repeat with the apple flesh (2).

Combine the celeriac and apple ribbons with the Dijon mustard (1 tbsp), the crème fraîche (5 tbsp), the chopped cornichons (1 handful) and the lemon juice (1) in a large bowl and stir gently to coat. Season to taste. Mix through half of the watercress (40 g).

Divide between serving dishes along with the smoked salmon (1 pack) and the remaining watercress (40 g). Serve with slices of thickly buttered sourdough, if you like.
