Ingredients

  • 1 block M&S all butter puff pastry
  • 1 punnet M&S Irish strawberries
  • 70g soft butter
  • 70g caster sugar
  • 70g ground almonds
  • 4 tbsp plain flour + 1tbsp for dusting
  • 1 egg
  • 2 tbsp strawberry jam
  • 1 packet Cook with M&S mint
  • 100ml M&S whipping cream

Method:

  1. Begin by preheating your oven, get a heavy tray in there and set the temperature to 190c
  2. To make the almond paste, place the butter and sugar in a bowl and blend with an electric whisk until pale in colour. Add the almonds, flour, and egg and mix into a paste. Set aside in the fridge.
  3. For the pastry, add the remaining flour onto a workbench and begin rolling it out until its approx. 1cm thick. Trim the edges to make a square before cutting into 4 even squares.
  4. Use a fork to prick some holes in the middle of the pastry squares, this will prevent the middle rising. Spread a thick layer of the almond paste across the forked area of the pastry squares.
  5. Remove the green leaves from the strawberries and place standing up in the almond paste.
  6. Place the squares on some baking parchment and onto the preheated tray in the oven. Cook for 25mins until the pastry is golden brown and the strawberries cooked.
  7. Allow to cool slightly on a wire rack, while they are cooling warm the jam in a small pot over a low heat. Brush the strawberries with the jam to create a glaze.
  8. Finish by topping with some mint leaves and serve with some lightly whipped cream
