Our sweet and fragrant Sapphire raspberries are summer’s sweetest treat. Pick them up in store and try these easy ideas

Raspberries like no other

Grown just for M&S, Sapphire raspberries are truly something special: juicy, super-sized and with a fragrant flavour a bit like raspberry jelly.

Pick up a punnet in store now and make them a part of your summer cooking – pulp, spread on vanilla sponges and sandwich with gently whipped cream; top raspberry jam with halved raspberries and clotted cream for scones with a difference; or use to fill our ready-made sweet tart cases.

They work well in warm-weather drinks too – muddle with lemon juice and a little honey then top up with soda, or make a raspberry bellini with blitzed-up berries and prosecco.

Three tasty ways with Sapphire raspberries

Lovely as they are as a simple snack, our Sapphire raspberries can also be used in a variety of drinks and dishes. Here’s a trio of sweet ideas:

  • Pink raspberry lemonade – gently crush some berries and put in a glass filled with ice cubes. Add a squeeze of honey, top up with soda water and garnish with a lemon slice for a cool, refreshing drink.
  • Oaty rasp-brekkie pots – layer natural yoghurt with squished raspberries and toasted jumbo oats for a fabulously fruity breakfast or pud.
  • Berry honey toasts – toast slices of sourdough, spread with cream cheese then top with smashed raspberries and a drizzle of honey for a satisfyingly sweet snack.

How to make a very berry compote

Because Sapphire raspberries are tangy yet super sweet, they’re perfect in a fruit compote. To make, heat some raspberries in a saucepan with sugar, water and lemon juice, bring to the boil then simmer for 10 minutes until the mixture thickens. Allow to cool before using – you can then layer a glass pot with compote, granola and yoghurt as shown in the image.

The compote can also be drizzled on porridge, ice-cream and summery puds such as Eton mess.
