Bring a large pan of salted water to the boil and add the spaghetti (400 g). Cook for 8-10 minutes, until al dente.

While the pasta is cooking, use a speed peeler to slice the courgette (2) into ribbons, then cut into thin matchsticks. Add to a large bowl with the red onion (1/2), tomatoes (400 g), lemon and rosemary oil (6 tbsp) and the zest of the lemon zest (1), reserving a little zest to garnish. Add most of the fresh basil (20 g), reserving some to garnish, and season to taste with salt and pepper.

Drain the pasta, reserving a cup of the cooking water, and toss through the tomatoes and courgettes. Add a small splash of pasta cooking water if needed to loosen. Serve with extra fresh basil, the reserved lemon zest, and a drizzle more lemon oil on top.
