Preheat the oven to 220°C/200°C fan/gas mark 7. Add a little olive oil to a large 25 x 35cm roasting tray. Add the chicken thighs (1 kg) skin-side down and season with salt and pepper.

Arrange the sweet potato (500 g) around the thighs, then place the tray on the very bottom shelf of the oven (this will help to crisp up the chicken skin) and roast for 30 minutes.

Meanwhile, mix the ginger (2 cm), garlic (3 cloves), peanut butter (80 g), cumin (2 tsp) and tomato purée (2 tbsp) in a jug. Pour in the chicken stock (1 pouch) and mix until smooth.

Remove the tray from the oven and flip the chicken thighs so they are skin side up. Carefully pour the peanut sauce around the chicken, keeping the skin exposed. Return the tray to the middle of the oven for 15 minutes.

Meanwhile, rinse the rice (200 g) under cold water. Bring a large saucepan of salted water to the boil, add the rice and simmer for 15 to 18 minutes until cooked. Drain and set aside.

After the chicken has cooked for 15 minutes, nestle the Tenderstem broccoli (350 g) into the sauce. Return the tray to the oven for a further 10 minutes until the broccoli is tender and the chicken is cooked through. If you prefer extra-crispy chicken skin, switch the oven to grill and cook for 5 to 10 minutes, watching carefully so the chicken doesn’t burn.

Scatter over the sliced red chilli (1) and serve the chicken with lime wedges (1) and the cooked rice.
