Preheat the oven to 190°C /170 °C fan/gas mark 5. Heat 1 tbsp of olive oil in a large frying pan or saucepan over a medium heat. Add the onion (1) and cook for 5 minutes, until soft.

Add the sweet potato (3), pepper (1) and mixed beans (1 tin) (including their water) and cook for a further 5 minutes.

Add the chilli con carne paste (1 pack) and cook for a further 1 minute. Add the chopped tomatoes (1 tin) and 200ml water, bring to a simmer and reduce the heat slightly. Season to taste. Cook for 25-30 minutes, until the veg is soft and the sauce is thick. Add an extra splash of water if needed.

Rinse the rice (240 g) under cold water, add to a large saucepan and cover with 480ml cold water. Season with salt and bring to the boil, reduce the heat and cover. Cook for 15 minutes. Fluff with a fork and set aside.

While the chilli and rice are cooking, prepare the tortilla bowls. Lightly brush or spray each tortilla (4) with olive oil on both sides. Press one of the wraps into the inside of a small ovenproof bowl to create a shell and shape to create small folds. Line the insides of the bowl with foil. Place on a baking tray and bake for 10 to 15 minutes until golden and crisp. Remove from the bowl and cool on a wire rack to prevent them from going soggy. Repeat with the rest of the wraps.

Serve the tortilla bowls with the rice, lettuce (2) and chilli. Top with spring onions (2), and the yogurt (as needed) and cheese (as needed), if using.
