Cut the cabbage (1) lengthways into quarters and remove the core. Chop into bite-sized pieces.

Add the cabbage to a bowl and sprinkle generously with salt, making sure it reaches every leaf. Add 100ml water and mix. Set aside for 2 hours.

Rinse and drain the cabbage thoroughly to remove excess salt. Gently squeeze out any water.

In a large bowl, mix together the garlic (5 cloves), ginger (1 1/2 in), soy (3 tbsp), honey (2 tsp), rice vinegar (2 tsp), sesame oil (2 tsp) and chilli flakes (3 tsp).

Add the cabbage, carrot (3), radish (1 pack) and spring onion (3) to the bowl and mix to coat.

Pack into a clean, airtight jar, leaving about 2cm of room at the top. Seal and leave in a cool place for 2-3 days or until the desired sourness is reached and then refrigerate.
