Mix together the egg (1), flour (50 g), milk (40 ml) and cumin (1 tsp) to form a batter. Season with salt and pepper. Stir in the carrot (3), onion (1), half the garlic (1 clove) and coriander (1 handful). If the mixture is too wet, add a little more flour if too dry, add a splash of water.

Shape the mixture into 12 small patties and set aside.

To make the houmous, blitz the chickpeas (1 tin), the remaining garlic (1 clove), lemon juice (1), harissa paste (2 tsp), extra virgin olive oil (2 tbsp) and 2 tbsp cold water. Season to taste.

To make the coriander yogurt dip, grate the cucumber (1/2) and squeeze to remove excess water. Add the cucumber to a bowl with the Greek yogurt (150 g), lemon juice (1/2) and coriander (1 handful). Season to taste.

Heat 1 tbsp olive oil in a non-stick frying pan over a medium heat. Fry the fritters for 3-4 minutes on each side, until golden and crisp.

Serve warm with the houmous and yogurt dip for dunking.
