Preheat the oven to 200°C/180°C fan/gas mark 6. Arrange the girasoli (2 packs), vine tomatoes (150 g) and cherry tomatoes (200 g) and peppers (1 pack) on a large baking tray and drizzle with olive oil (divide between two trays if you don’t have one that’s big enough to allow for some space). Season with salt and pepper.

Roast for 15 minutes, then remove from the oven and gently turn the pasta with a fish slice or spatula. Return to the oven for a further 5-10 minutes until the ravioli is golden and the tomatoes are breaking down (keep an eye on them to ensure the ravioli doesn’t catch at the edges).

Serve scattered with the rocket (20 g), with some pecorino (30 g) shaved on top with a speed peeler.
