Heat the oven to 240°C/220°C fan/gas mark 9 and lightly oil a 30 x 23cm baking tray.

Add the red cabbage (1/2) to a bowl and squeeze over the juice of the lemon (1) and a good drizzle of olive oil. Season with salt and pepper and set aside.

Add the red onion (1/2) to a heatproof bowl and season with salt, cover with boiling water and set aside.

Blitz the brown onion (1) in a food processor with garlic (3 cloves) until finely chopped. Add the lamb mince (2 packs) and shawarma seasoning (2 tbsp) and blitz again until combined. Season generously with salt and pepper.

Press the mix into the oiled baking tray. Slice into 8 kebabs, then score each one widthways along its length. Pop into the oven and roast for 20 minutes.

Meanwhile, add the chips (500 g) to a large baking tray and cook for 20 minutes, until golden brown. Once they are cooked, remove from the oven and cover with foil to keep warm.

Turn the oven to a medium-high grill, and then grill the kebabs for 10 minutes, until cooked through and lightly charred (the kebabs will shrink slightly).

Toss the lettuce (1/4), cucumber (1/4) and tomatoes (2) with olive oil and season with salt, pepper and dried oregano (3 tsp).

Warm the flatbreads (4) under the grill for a couple of minutes and drain the red onions.

Cut the remaining lemon (1) into wedges. Pile the flatbreads with cabbage, lamb kebabs, red onions, salad, pickled chillies (to taste) and lemon wedges. Finish with garlic mayo (to taste) and naga chilli sauce (to taste), if using. Serve with the chips on the side.
