Preheat the oven to 190°C/170°C fan/gas mark 5.

Bring a large saucepan of salted water to a boil. Add the quartered potatoes (1 pack) and par-boil them for 8-10 minutes, until fork tender.

In a large bowl combine the lamb mince (1 pack), red onion (1/2), garlic (2 cloves), crumbled feta (50 g), Greek seasoning (1/2 tbsp), breadcrumbs (2 tbsp), a drizzle of olive oil and season with salt and pepper. Gently mix until combined, taking care not to overwork the mixture.

With clean hands, roll the mixture into 16 golf ball-sized meatballs. Set aside.

Drain the potatoes and add to a large traybake dish along with the courgettes (1), tomatoes (1 pack) and sliced red onion (1/2). In a small bowl, mix the olive oil (2 tbsp), Greek seasoning (1 1/2 tbsp) and lemon juice (1/2), then pour over the vegetables and toss to coat evenly.

Nestle the meatballs among the vegetables and crumble over the feta (50 g). Season with black pepper and roast in the oven for 45 minutes, turning the meatballs halfway through until golden brown.

Meanwhile, mix together the yogurt (3 tbsp), mint sauce (2 tsp) and lemon juice (1/2) in a small bowl.

Once the traybake is cooked, drizzle the minty yogurt sauce over the traybake and serve immediately, with toasted pitta if you like.
